- Abstract
The aim of this study was to determine the effect of nitrogen and sulphur applications on the amount of vitamin C, antioxidant activity and total phenolic compounds of dry onion. The study was carried out in Atatürk Central Horticultural Research Institute in the years of 2012 and 2013 in Yalova. The fertilizer was applied in combination of N, S and rates of the N-S combinations was 0, 5, 10 and 20 kg N da-1 and 0, 2.5, 5 and 10 kg S da-1. At the end of the study there were any relationship between N, S fertilization and the content of dry onion's vitamin C. But, total phenolic content and antioxidant activity were significantly affected from NxS fertilization in the first year. The total phenolic content of onion bulbs were determined as 63.16 mg 100 g-1 (N20S10) and 76.92 mg 100 g-1 (N0S2.5). On the other hand, the antioxidant activity was determined 202.34 mg 100 g-1 (N5S2.5) and 301.94 mg 100 g-1 (N0S2.5) also. There was no effect from N, S fertilization in the second year on both total phenolic content and antioxidant activity.
