- Abstract
The article discusses the use of precautionary allergen labeling (PAL) in the food industry and the need for a regulated approach to assessing unintended allergen presence (UAP). It emphasizes the importance of accurate risk assessment and the need for further research in this area. The article also discusses the interpretation and implications of data on allergen thresholds for individuals with food allergies, cautioning that estimates for the proportion of allergic individuals who may react to very low doses of allergens should be interpreted with caution due to limited data at these levels. The text suggests alternative approaches, such as single-dose oral food challenges, to validate these estimates and highlights the potential benefits of individualized allergen management based on a patient's threshold. It addresses concerns about the applicability of oral food challenge data to real-world exposures and the impact of food processing on allergenicity. The article concludes by calling for the sharing of standardized oral food challenge datasets to inform allergen risk management.
