- Abstract
The objective of this research is to understand the relevant differentiation bases in the perception of value of customers of Japanese food restaurants in the city of Maringá-PR. For this, we opted for a qualitative research, based on secondary data, collected from evaluations available on the Tripadvisor website, in the profiles of the ten best rated restaurants in the city. The results indicated that the customer's perception is based on the characteristics of the product and the service. It was found that the studied Japanese food restaurants have the potential to meet customers' expectations, but still have the possibility of reducing negative perceptions that hinder raising their level of differentiation.
