- Abstract
Chicken and by-products are among the main foods involved in plant infections caused by Salmonella spp. In recent years, there has been a global increase in the consumption of poultry meat, highlighted by the high production and low cost of chicken meat. In this study, the occurrence of Salmonella spp. in chicken meat was investigated to monitor the frequency of positivity and its progress towards safety through a survey of published data on the topic between 2010 and 2021 worldwide. The continents that showed the highest positivity rates were: Asia (35.53%), followed by Africa (33.31%), Europe (17.54%) and North and Central America (14.24%). South America, according to the studies evaluated, was the continent with the lowest occurrence, with 9.51% of positive samples for Salmonella spp. No data were obtained from Oceania. The serovars Typhimurium and Enteritidis were the most detected, and they are important in cases of salmonellosis in humans and are also related to economic losses. Over time, the prevalence of Salmonella has been constant, even with all controls carried out in the field and industry. Studies and knowledge about the persistence mechanisms of this agent as well as the tools for its control are still needed.
