- Abstract
The purpose of this study was to investigate the quantitative assessment of the image of the belly profile of hog carcass. The experiment used 48 hogs in a commercial slaughterhouse for slaughtering and cutting, collecting carcass trait data, photographing and scanning the image of the belly profile of the 6th rib, and analyzing the image of the belly using computer software. The results showed that the area of the image of the belly profile was 160.12 ± 23.91 cm², and the ratio of fat to lean meat in the image was 42.21 ± 11.15% and 57.79 ± 11.15%, respectively. The average depth of the belly profile was significantly positively correlated with the cut surface area and fat area of the belly profile (r = 0.460, 0.529, P < 0.001). The weight of the belly was significantly positively correlated with and the average belly depth, the area of belly profile, and the fat area, respectively (r = 0.540, 0.498, 0.405, P < 0.001).
