- Abstract
This article explains about the use of Cearense cuisine on tourism in the State of Ceará, Brazil. The paper aims to identify the context that leads to Cearense cuisine to appear as attractive for tourism in Ceará. This is an exploratory study based on the review of the literature involving the analysis categories: gastronomy, regional cuisine and tourism. It appears that the Cearense cuisine was used as a strategic element, from Ceará government's efforts at state-building process as a tourist destination and, apparently, needs to be rediscovered and preserved patrimonializada.
