- Abstract
The rapid detection methods of the year and grade of Baijiu base liquor were studied, and various pretreatment and modeling methods were carried out through NIR analysis. The results show that the specific absorption range of alcohol and fat in Baijiu base liquor was 4 833~6 846 cm-1,and the year and grade NIR models were established. It was confirmed that the LSSVM model was the best modeling method for the experiment. The best pretreatment methods were SNV and 1d+SNV respectively. The determination coefficients R2 c and R2 p of the correction set and verification set of the near infrared model for the year were 98.63% and 56.72% respectively, and the standard deviations RMSEC and RMSEP reached 0.042 1 and 0.344 respectively; The R² c and R² p of the near-infrared models reached 99.56% and 58.17% respectively, and the standard deviations RMSEC and RMSEP of the near-infrared models reached 0.022 1 and 0.213 4 respectively; The RPD of the year and grade models reached 23.75 and 44.72 respectively. The research can promote the rapid development of Baijiu industry and Baijiu analysis technology.
