- Abstract
The aim of this study was to evaluate the phenolic compounds and the antioxidant activity of different extracts from fennel fruits with a view to expanding the scope of their application. The annual fennel fruits (Foeniculum vulgare Mill. var. dulce Mill.), harvest 2020 and 2021 were used. The hydroxycinnamic acid derivatives, chlorogenic acid (236.61-287.78 μg/g) and caffeic acid (229.13-305.38 μg/g) acids were found in fruits from both harvest. The hydroxybenzoic acid derivatives, salicylic acid (421.00-913.18 μg/g) and vanillic acid (554.95-785.82 μg/g) were found in all investigated samples. Extracts with acetone, water, 95% ethanol, and 50% methanol were obtained from the fennel fruits. The antioxidant activity of the fennel extracts was determined by the four methods (DPPH, ABTS, FRAP, CUPRAC). All extracts showed antioxidant activity, which was in the highest values shown in the aqueous ones, regardless of the harvest time.
