- Abstract
Background: The papaya (Carica papaya) contains between 15% and 20% of seeds, which are considered agroindustrial residues that generally have no value and proper management. Objectives: The extraction of oil from papaya seed using supercritical carbon dioxide under different conditions of pressure and temperature was studied in order to evaluate its effect on the yield, fatty acid composition and content of sterols and tocopherols. Also, physicochemical properties were determined as oil quality parameters. Methods: A central composite design using response surface methodology was employed considering pressures between 20-35 MPa and temperatures between 40 and 60 °C, with a flow of CO2 of 30 g/min1 and an extraction time of 150 min. The composition of fatty acids was determined by gas chromatography with flame ionization detector. The sterols and tocopherols were analyzed by gas chromatography coupled with mass spectrometry. The physicochemical properties were performed according to the Colombian Technical Standards and AOAC. Results: Pressure, temperature and their interactions had a statistically significant effect (p<0.05) on the oil yield. The optimum oil yield was 26.3%, obtained at 38.1 MPa and 36°C. The fatty acids identified were: oleic, palmític, linoleic, esteárico, palmitoleico, laurico, linolenic and miristic. Furthermore, the following minority components were identified: campesterol, stigmasterol, β-sitosterol, cycloartenol, sitostenone, squalene and -tocopherol. Conclusions: The supercritical extraction allowed the obtaining of a high yield in oil of papaya seeds, and a selective extraction in fatty acids and squalene, which may be of interest for different industries.
