- Abstract
The objective of this study is to assess lean manufacturing tool as a strategie that mitigate operational risks in the supply chains of Hass avocado in the state of Valle del Cauca, Colombia. Value stream mapping is applied and risks are characterized and prioritized by using FMEA (Failure Mode and Effect Analysis) and FQFD (Fuzzy Quality Function Deployment). Risks are correlated to waste to propose mitigation actions associated with lean manufacturing tools. The results show that 5S (Sort, Set in order, Shine, Standardize, and Sustain), Total Productive Maintenance (TPM), standard work, and visual management support the mitigation of the risks examined. In conclusion, the productive chain is composed of producers, primary transport, packing lines, and secondary transport, which are essential links and the main sources of operational risks.
