- Abstract
This study investigates the sensory quality of coffee produced in the Serra da Canastra region of Minas Gerais, Brazil, considering the influence of altitude and processing methods. Using a mixed linear model that incorporates random and fixed effects, the final score assigned in the sensory analysis of the coffees was analyzed. The objective was to evaluate the spatial correlation structure in the model, considering the final score > 83 points. The results indicated that the model with the spatial correlation structure obtained through the exponential semivariogram provided a better explanation for the variations among the units. This suggests that spatial variability plays an important role in determining the sensory quality of coffees, particularly concerning the final score in sensory analysis. This study highlights the relevance of mixed models in the sensory analysis of coffees, especially when considering spatial correlation structure.
