- Abstract
Despite this perception, Tangires demonstrates how the wholesale market became the foundation of the urban food system and the wholesaler "was the keystone" (215). From 1921 to 1930, the United States Department of Agriculture operated Center Market, an open public market near the National Mall and the only market "subject to federal oversight" (106). In I Movable Markets i , Helen Tangires unpacks the evolution of the American wholesale marketplace from centralized produce district to its current existence within industrial food parks located outside the city and beyond public access.
