- Abstract
The article offers information on Cyprus esculentus or chufa's fatty acid composition and physical-chemical properties. It states that chufa is considered as superior oil wherein its tubers contain nondrying oil used for making soap and cooking. Meanwhile, its nuts are rich in protein, fiber, and oil. In addition, the tubers of chufa comes are rich in minerals including magnesium, sodium, and aluminum.
