- Abstract
The article evaluates the validity of the modified AOAC method for the determination of total dietary fiber contents in eight representative foodstuffs. The results suggest that the enzymes possess enzymatic characteristics for resistant starch equivalent to those in the enzymes manufactured by Megazyme. The results also indicate that the modification of the enzymatic digestion process has a huge effect on reducing the labor-intensive nature of the method.
