- Abstract
The article presents a study on the effect of dietary fucoxanthin, a marine carotenoid found in edible seaweeds, on the level of n-3 highly unsaturated fatty acids (HUFAs) in the liver of normal adult C57BL/6J mice. The results of the study indicated that fucoxanthin may alter the metabolic pathways of n-3 and n-6 HUFAs. It was observed that dietary fucoxanthin accumulates as fucoxanthinol and amarouciaxanthin A in the liver, and enhances the amount of docosahexaenoic acid (DHA) and arachidonic acid (AA) in the liver of the experimental mice.
