Although there is some indirect archaeological evidence for alkali processing of corn in the Midwest by the Mississippian period, there is widespread disagreement about the details of the processing. This paper presents a series of experiments on the production of limewater by boiling and soaking fire-cracked limestone vs. secondary burning, crushing, and soaking methods. Changes in alkalinity are measured using a Hanna pH meter.
