The article is part of a larger project which search to stydy in historical and culturally way the Jalapeño peppers, seen in they their myths, practices and popular representations, all, related with national identity and gender. This investigation is based on documentary, bibliographic and hemographic sources, among which are personal correspondence, the chronicles of the conquest, the cookbooks and specialized literatura.
