- Abstract
The article provides information on a study meant for improvement of quality of koji rice variety by fermentation with Aspergillus oryzae fungal strain and a plant Astragalus radix. The metabolite analysis after addition of plant and fungal strain indicates difference in kojic acid, calycosin and formononetin when compared with other methods of fermentation. The identification of optimal conditions for fermentation of rice koji variety to improve its quality is also included.
