- Abstract
The article presents a study which demonstrates the potent odorants of mat rush aroma through aroma extract dilution analysis (AEDA). The researchers applied the solvent-assisted flavor evaporation (SAFE) technique to prepare the aroma concentrate of the mat rush. Among the odorants identified are isovaleric acid, methyl anthranirate and vanillin. The researchers conclude that the drying process of the mat rush contributes to the formation of the aroma.
