- Abstract
The article reports on the method of establishing enzymatic preparation of 3-dehydorquinate and 3-dehydroshikimate in the shikimate pathway by controlling the enzyme activity of 3-dehydroquinate dehydratase. 3-dehydroquinate was the predominant product formed when quinate was incubated with the membrane fraction of acetic acid bacteria at pH 5.0, while 3-dehydroshikimate was the sole product when incubated at pH 8.0. Moreover, the mutual separation of the metabolic intermediates was exemplified.
