- Abstract
The experiment studied the effect of age on the fatty acid (FA) composition and cholesterol (CHO) content of different parts of Sunite sheep under natural grazing conditions. Eight sheep at 8, 24 and 36 months of age were selected respectively from the natural pasture grazing group, and slaughtered after fasting for 12 h and water restriction for 2 h. The results showed that with the increase of age, the content of EE and CHO in muscle tissue increased significantly (P<0.05), the highest values were in gluteus muscle and longissimus dorsi muscle at 36 months of age, respectively. With the increase of age, the content of EPA, DHA, SFA, PUFA, n-6 PUFA, n-3 PUFA, n-6 LCPUFA, n-3 LCPUFA and P/S in muscle tissue were significantly decreased, while the content of UFA, MUFA, n-6/n-3 and U/S were significantly increased. The content of SFA was the highest in longissimus dorsi muscle and gluteus muscle. MUFA was the highest in longissimus dorsi muscle and brachial triceps muscle, PUFA was the highest in gluteus muscle, and n-3 LCPUFA was the highest in biceps femoris muscle. The interaction between age and muscle location had significant effect on content of C16: 1, C17: 0, C18: 1t9, C18: 2t6, PUFA and n-6/n-3 (P<0.05). The experiment indicates that the muscle of eight-month-old Sunite sheep has lower CHO content, and FA composition is better than that of 24-month-old and 36-month-old sheep, the proportion of PUFA, n-3 PUFA, n-6 PUFA, n-3 LCPUFA and n-6 LCPUFA is higher, and n-6/n-3, MUFA and SFA are lower. The effect of age on FA composition and CHO content in Sunite sheep were different in different parts of muscle.
