- Abstract
The aim of this study was to evaluate the quality of selected varietal honeys available on the Polish market. The evaluation was carried out based on selected parameters, their compliance with standards specified in valid regulations. Research material consisted of 6 varieties of honey: rape, lime, acacia, buckwheat, multiflower and honeydew. The research included determination of moisture of honey, determination of water content by refractometric method, total acidity. Mechanical impurities of the honeys as well as adulteration (detection of starch and sucrose) and color measurement were performed. Most of the examined honeys met the requirements set by the standards. Any deviations observed were small. Only one of the tested honeys, i.e. the sample of lime honey, showed minimally higher water content (20.13%), which may indicate e.g. their incomplete maturity. Acidity in rapeseed, lime, acacia and honeydew honeys did not raise any objections. Acidity in buckwheat and multiflower honeys was elevated. The permissible amount of mechanical impurities, was exceeded in the examined honeys. No starch was found in the honeys. The sucrose content in the examined honeys did not raise any objections, as it is much lower than stated in the Standard.
