- Abstract
The article discusses the ways on how the implementation of USDA Regulations in School Cafeterias are supported by the Child and Adolescent Trial for Cardiovascular Health (CATCH) Eat Smart Program. The implementation of standards in school lunch under the National School Lunch Program in 20 CATCH schools 5 years after the trial compared with 12 schools unexposed to CATCH is described and evaluated. The evaluation is made using questionnaire in regard to demographic data, behavioral construct, training, program material and guideline implementations. Menus and recipes from school cafeteria were compared against USDA Meal Initiative Standards. Results of the study of the interventions are discussed.
