- Abstract
This study aimed to evaluate the chemical and physical-chemical pulp noni grown in the state of Ceara. Ripe fruit from a plantation located in the city Horizonte (Ceara-Brazil) were pulped and the pulp extracted, packaged in polyethylene bags, sealed and stored at -20°C for further analysis. The centesimal composition was determined: moisture (91.91%); carbohydrates (0.63%); total lipids (0.08%); protein (1.06%); ash (6.32%); fiber (1.76%); energy value (30,25kcal.100g-1) and chemical and physical-chemical properties: pH (4.25); total soluble solids (9.2°Brix); acidity (0.63g.100g-1); ratio (14.66); vitamin C (122.54mg of AA.100g-1); total sugars (5.45g.100g-1); reducing sugars (5.32g.100g-1); phenolic content (216.67mg of EAG.100g-1); antioxidant (6.27μmol. TEAC g-1), water activity (0.93); (AIR) alcohol insoluble in residue (2.8g.100g-1), pectin (1.14g.100g-1), hemicellulose (0.25g.100g-1) and cellulose + lignin (0.45g.100g-1). The results show that the noni pulp has a low content of protein and fat, is rich in carbohydrates and has a significant amount of antioxidants, especially vitamin C and phenolic compounds.
