- Abstract
Critical factors were diagnosed and improvement issues were suggested for the enhancement of the production process of a small-size dairy to reduce environmental impacts caused by the factory. The discharge of serum to the effluent and water consumption are the dairy´s main issues. Suggestions were thus given for the hygiene, cleaning and production stages for loss control. Improvements were easy to execute operationally and financially. Only a little effort had to be expended for the implementation of an environmental administration system. Changes in the company´s philosophy is the main factor so that sustainability may become inherent to production, especially when investments are relatively small and returns come at short or medium term.
