- Abstract
The article discusses the results of a study which examined the effects of field growing conditions on soybean phytate and protein contents. The study also examined the effect of phytate content on tofu texture. The phytate contents of 12 varieties of soybean were found to be higher in drained patty field than in the upland field. The difference in the soybean phytate content among the environmental conditions causes fluctuation in tofu quality.
