The article presents an examination of pom, a traditional festive casserole dish of Surinam prepared with the kernels rather than the seeds of the taro plant. The dish is used to describe the social and economic history of Surinam, and its origins are traced to Jewish immigrants to the country at the start of its colonization by the Dutch. A variety of recipes for the dish are given.
