- Abstract
Background: Coconut is a fruit globally know for its nutritional value according to its ripeness, generally presenting significative amounts of minerals salts (potassium, sodium, phosfurus and chlorine), carbohydrates, protein, fat, vitamin A, E, B1, B2, B5, C, magnesium and fiber. Furthermore, coconut water inside of its natural Shell it is considered as sterile beverage. With all this is ipmportatn to highlight that cconut handling needs care and knowledge in good manufacturing practices with the purpose to avoid its contamination, so its composition rich in nutrients make it susceptible to microbiological contamination. Objectives: To evaluate the microbiological and hygiene quality of coconut water reatailed in small cars with serpentine to refrigerate in the municipality of São João Nepomuceno-MG. Methods: Five samples of coconut water were collected inthe municipality of São João Nepomuceno-MG, on September 2015. Samples were conducted to the Microbiology laboaratory of the Universidade Presidente Antônio Carlos, in isothermic boxes with ice and processed to analyse total and thermotolerants coliforms, using colilert®, and mesophilic bacterias, mold and yeast usisng pour plate method. Results: For the microbiological analysis of coconut water that determined the presence or ausence of total and thermotolerants coliforms, a yellowish color was observed, confirming the presence of total coliforms in all samples. Thus, all samples presented fluorescent chacaterisctics as result of the presence of Escherichia coli. Conclusions: The samples of coconut water retailed in street small cars in the municipality of São João Nepomuceno-MG, were considered unfit for human consumption. The adoption of good manufacturing practices could be an important factor to reach acceptable levels of food safety.
