- Abstract
Food waste is a problem found throughout the production chain, from planting to consumers' tables. In this scenario, UANs are one of the sectors that contribute to part of this waste. The present study aimed to evaluate food waste in a medium-sized military UAN and to evaluate the waste between rooms A, B and C, where the military eat according to their rank. To carry out the work, a quantitative survey was carried out by collecting data during lunch, which occurs from 11:30 to 13:45, for 5 days between November and December 2021. dirty leftovers had an average of 10% for the 05 days evaluated, that is, above 3%, a recommended and acceptable value for a FNU, according to the literature. Another result obtained was the presence of a greater waste of IR and surplus per capita in room A, composed of soldiers and corporals, military personnel with lower rank and education. These results may be related to the lack of awareness of the issue of waste. Thus, based on the characteristics verified for the evaluated UAN, measures are needed in order to reduce the SS and IR generated and, as a consequence, minimize costs and environmental impacts. It is hoped that the reported results can serve as a basis for the unit to implement measures aimed at reducing waste and consequently improving productivity.
