- Abstract
The article presents a study on the evaluation of pasteurized and irradiated apple cider containing potassium sorbate. In 2001 and 2002, consumer preference and acceptance sensory tests and volatile flavor analyses were conducted to apple cider which were irradiated and pasteurized with potassium sorbate. The tests revealed that ciders with higher levels of esters and other compounds typical of apple flavor have higher preference and acceptability ratings.
