- Abstract
The article presents a study on kinetic analysis of osmotic dehydration carried out with reused sucrose syrup. The study aims to determine effective diffusivities for water and sucrose in apple pieces during osmotic dehydration with sucrose syrups. Processing times needed to achieve a target level of soluble solids were determined as a function of syrup soluble solids. A computer program was written to predict soluble solids change during the sequential osmotic dehydration process.
