- Abstract
The objective of this article is to verify the sensory acceptability of beef croquettes adding pumpkin shell meal (PSM), among adolescents, and to determine the physio-chemical composition of the traditional product and the one containing higher PSM with sensory acceptance like standard. Five croquettes formulations were developed: F1 - standard (0%) and the others added 1.75% (F2), 3.50% (F3), 5.25% (F4) and 7.00% (F5) PSM. 140 untrained tasters participated, of both genders, 15 to 19 years old. The formulations F1, F2 and F3 showed greater acceptance by the tasters. The sample F3 showed higher levels of ashes, lipids, calories and fiber, with lower carbohydrate values compared to F1. It is concluded that a level of addition up to 3.5% PSM in croquettes is well accepted by the tasters, obtaining similar sensory acceptance to the standard product with good marketing expectations.
