FERMENTAÇÃO NATURAL NO PROCESSO DE PRODUÇÃO DE PÃES: BENEFÍCIOS PARA SAÚDE?

- Abstract
INTRODUÇÃO O fermento natural contém as leveduras e bactérias láticas que coexistem em equilíbrio passados dias durante o processo de fermentação (VOGELMANN; HERTEL, 2011). A fermentação natural ou levain tem importância evidenciada pelos alimentos fermentados e comercializados na atualidade. Trazendo benefícios que vão desde a preservação, bem como a atribuição de características organolépticas desejáveis e retardando a digestibilidade do amido (FLANDER et al, 2011 apud STEFANELLO, 2014). Existem evidências que pães produzidos com levain, podem ser consumidos em casos de síndrome do intestino irritável (COSTABILE et al, 2014; LAATIKAINEN et al, 2017; PIRKOLA et al, 2018; LOPONEN & GÄNZLE, 2018; MENEZES et al, 2019 apud MELO, 2018). Essa técnica, ainda pode beneficiar a produção de pães para indivíduos com Sensibilidade ao Glúten Não-Celíaca (RIZELLO et al, 2007; POUTANEN et al, 2009; DI CAGNO et al, 2010; GRECO et al, 2011 apud MELO, 2018). Objetivou-se revisar a literatura científica quanto a características do levain e benefícios à saúde. METODOLOGIA Revisão bibliográfica realizada de novembro de 2020 a abril de 2021, nas bases de dados Scientific Eletronic Library Online (SCIELO), Portal de periódicos (CAPES), Biblioteca Digital Brasileira de Teses e Dissertações (BDTD) e Google acadêmico. Pesquisou-se artigos publicados de 2005 a 2020, abordando fermentação natural de pães sem glúten, produção e aplicação de fermento natural, levain na substituição ao processo tradicional, utilização do sourdough na redução dos FODMAPs e vantagens e desvantagens da utilização do levain. Utilizouse os descritores: fermento natural, fermentação natural de pães, levain, sourdough e panificação; em língua portuguesa e inglesa. A seleção foi realizada pelo título, resumo e leitura seletiva de trabalhos e foram selecionados 16 artigos. RESULTADOS A aplicação de fermento levain contribui sensorialmente, na textura, validade e aspectos nutricionais dos alimentos fermentados. A fermentação sourdough causa impacto nas características funcionais dos alimentos, como a biodisponibilidade de minerais e fitoquímicos, índice glicêmico e produção de compostos bioativos. A fermentação natural na fabricação de pães permite a redução de 90% dos FODMAPs. O levain influencia a composição e o perfil da microbiota intestinal humana, e pode trazer benefícios aos portadores da síndrome do intestino irritável. Os efeitos da proteólise é um dos aspectos fundamentais na qualidade do levain, sendo sugerida como ferramenta nos processos de produção de alimentos para portadores da doença celíaca. As características sensoriais são transformadas, compostos alergênicos atenuados, proteínas do glúten degradadas e uma maior quantidade de aminoácidos livres liberada. Peptídeos bioativos foram encontrados no levain, além dos diversos antioxidantes, antifúngicos e anti-hipertensivos. A síntese de ácidos orgânicos reduz a digestibilidade do amido, sendo positivo para diminuição do índice glicêmico. As leveduras por meio do seu metabolismo são capazes de produzir diversas vitaminas, principalmente do complexo B. Tem potencial efeito benéfico, visto que a síntese de aminoácidos e atuação de algumas cepas de bacterias, pode camuflar o teor de sal e enriquecer os produtos de panificação por meio de compostos antihipertensivos CONCLUSÃO Mesmo não sendo uma técnica difundida em nível industrial, a fermentação sourdough tem relevância nos aspectos sensoriais dos pães e potencial em beneficiar a saúde.
