- Abstract
Metal-polyphenol network (MPN) was prepared by Fe3+ and tannic acid (TA), which was further used for functional modification of cellulose microfibrils (CMF), to prepare CMF-MPN complex. The effects of preparation conditions of CMF and MPN on the antioxidant property and stability of the CMF-MPN complex were investigated. The results showed that MPN endowed CMF with antioxidant property, and the DPPH clearance rate of the obtained CMF-MPN complex reached to 97. 0% at MPN (prepared at TA∶Fe3+ =4∶1 and pH value of 3) additive amount of 2%. The residual mass of CMF-MPN complex increased by 8. 13% compared with CMF but the maximum pyrolysis temperature decreased slightly according to the thermogravimetric analysis (TGA) . Fourier transform infrared spectroscopy (FT-IR) analysis suggested the physical adsorption between CMF and MPN. Moreover, the application of CMF as a carrier improved the stability of the MPN structure, maintaining 80% of the initial antioxidant property after 60 days, showing the performance of releasing antioxidant factors continuously and slowly. This work provided a new idea for the development of green food preservation packaging materials.
