- Abstract
A balanced diet is essential to maintain a healthy body and to have a smooth functioning of metabolic processes. Although essential nutrients can be obtained through food, many people choose to use food supplements, especially those who practice physical activities, who need a greater protein and nutritional intake. Thus, supplementation is an excellent alternative to replenish and complement the necessary amounts of proteins, amino acids, vitamins, mineral salts and antioxidant compounds. Considering the nutritional and functional importance of Whey Protein and antioxidant compounds, a formulation containing these two substances was developed. Therefore, this work aims to propose the formulation of a supplement containing Whey Protein 80 and acerola extract, available in a single dose, to be consumed in a practical and efficient way. For this, firstly, a lyophilized extract of acerola was obtained and the vitamin C content was determined by oxidation-reduction titration. Afterwards, a powdered food supplement formulation was developed with a protein source of whey protein 80 and the protein content of the formulation was determined using the official Kjeldahl method. The vitamin C content of the lyophilized acerola extract was 10.4 g/100g of Vitamin C and the protein content of the formulation was 22.78 g of protein per portion of the supplement. In this way, it was possible to develop a food supplement formulation with a high protein content and vitamin C.
