- Abstract
Foodborne diseases by Salmonella spp. occurs through fecal contamination of individuals with Salmonella spp. and this is a public health problem. This paper aims to conduct a literature search about food security from community with a focus in Salmonella spp. It's an online literature search in databases LILACS, SCIELO and PUBMED/MEDLINE with keywords: foodborne diseases, food security and Salmonella spp., including articles published between 2005-2010. After reading the full-text articles were created eight categories, to learn about the importance of foodborne diseases by Salmonella spp. and how to ensure food security: history and classification, characteristics of the microorganism, symptoms and transmission of Salmonella spp., mechanisms of pathogenicity, epidemiological data, therapy for infection by Salmonella spp., prevention, control and educational interventions and interface with the family health strategy. Health professionals need to emphasize information about preventive practices, as well as to increase resources and socio-educational methods, culturally appropriate for each region, to help understanding the relationship between failures in the processing of household food and health risks, to decrease morbidity and mortality from foodborne diseases caused by Salmonella spp.
