EFFECT OF MORINGA LEAF POWDER ON THE MICROBIOLOGICAL QUALITY OF CHICKEN NUGGETS UNDER REFRIGERATION CONDITION.

Abstract

The present investigation was envisaged to standardize the method of preparing Chicken Nuggets Incorporated with Moringa (Moringa oleifera) leaf powder under Refrigeration Condition and to assess the influence of Moringa Leaf Powder on the microbial characteristics of chicken nuggets at various storage intervals under refrigeration. The total plate count climbed significantly as the storage period progressed. When compared to the Control sample, the Treatment sample had lower values throughout the storage period, yet the changes were extremely significant. The lipolytic count increased significantly as the storage period progressed. When compared to the Control product, the Treatment product had lower values throughout the storage period, and the differences were extremely significant. During the observation, no coliforms were found in either of the samples. Yeast and mould colonies were nonexistent in both goods until the seventh day, when they considerably increased in both the Treatment and Control items. When compared to the control, the treatment product had significantly lower values during the observation period.
