- Abstract
The objective of this study was to evaluate the physicochemical, hygienic and microbiological quality in milks of a collection center of Vetaquemada - Boyacá - Colombia, through a descriptive cross-sectional study, taking 42 samples of raw milk from 14 collection tanks (3 samples per tank). Physicochemical parameters were determined: protein, fat, lactose, non-fatty and total solids; Hygienic: somatic cell count (RCS) and microbiological: aerobic mesophilic bacteria count, total (TC) and fecal coliforms (FC). Protein =2.9%, fat =3.97%, lactose =4.47%, total solids (TS) = 11.30 Solids-non-fat (SNF) =7.50 were obtained. In the RCS, 90.9% of the tanks evaluated determined values <400.000 somatic cells (SC)/mL of which 42,42% <200,000 SC/(milliliter) mL gand 48.49% % between 200.001 to 400,000 SC/mL, 9, The remaining 0.9% corresponds to values greater than 400.000 SC/mL. The aerobic mesophilic bacteria (CFU) count was in a range of 17 x 103 and 16 x 106 CFU / mL with a global average of 22 x 105 CFU / mL, where 60% of the samples met the microbiological limits established in resolution 000017 (2012), reporting bacterial counts below the maximum value allowed for Region 1, considering acceptable for human consumption, the remaining (40%) were outside the microbiological limit for aerobic mesophilic bacteria (> 20 x 104 CFU / mL). Total coliform values found ranged between 120 and> 2400 most probable number (NMP) mL-1 and FC <3 and 120 NMP mL-1, where 40% of the samples were greater than> 3 NMP / mL. The results showed that, in order to guarantee the compositional and hygienic quality of milk it is necessary to fully comply with the standards established for milking, transport and storage of milk practices throughout the entire production chain.
