- Abstract
With the immunological activity and DPPH · scavenging capacity of the peptides obtained as targets,the hydrolysis effect of neutral protease and papain on proteins from Cervus-elaphus linnaeas antler blood and the relationship between DPPH · scavenging capacity and immunological activity of the peptides obtained were studied. The optimal hydrolysis conditions of the proteins catalyzed by neutral protease and papain were at 50 °C under pH 7.1 for 2 h, and those catalyzed by and papain were at 45 °C under pH 6.8 for 1.5 h when the [ E/S] was 9000 U/g. Compared with the single protease,the immunological activity of peptides obtained increased 20.8% under the same content of protein. The results implied some relation between DPPH · scavenging capacity and immunological activity of the peptides ( r = 0.957,P<0.01).
