- Abstract
The article focuses on the new regulations issued by the Bulgarian government related to its dairy products specially yogurt. It states that Bulgaria is considered as the homeland of yogurt and of microflora because it causes fermentation. It further focuses on the efforts of various local authorities for the protection of yogurt's production method including Ministry of Health, Ministry of Agriculture and Food, and the Food Safety Agency.
