Chilean start-up NotCo is using artificial intelligence (AI) to create plant-based alternatives to animal-based foods. The company's AI algorithm, named Giuseppe, analyzes the molecular and chemical properties of over 300,000 plants to find combinations that mimic animal-based ingredients. NotCo has already partnered with major companies such as Starbucks, Burger King, and Kraft Heinz, and has raised $430 million in funding. The plant-based food industry is growing globally, but still represents a small fraction of the overall market for animal products. NotCo's success has led to legal battles over the use of terms like "milk" and "steak" to describe plant-based products. The company is also exploring opportunities in other sectors, such as personal care products and pet food.
