- Abstract
The present research work was conducted to evaluate the effect of natural gas grilling on the formation of eight polycyclic aromatic hydrocarbons, i.e. naphthalene phenanthrene, anthracene, fluorene, pyrene, acenaphthene, fluoranthene, benzo[α]pyrene, in the five, chest, foreleg, hind leg, heart and liver, organs of Kajli sheep variety. All these organs, after collecting, cleaning, grilling, concentrating and re-dissolving in HPLC grade acetonitrile, were subjected to HPLC analysis for the identification and then determining the concentration of each of the chosen PAHs in control as well as grilled samples. The results showed that almost all the grilled organs expressed greater concentration of the titled polycyclic aromatic hydrocarbons as compared with the corresponding controls. The indication of a little concentration of the chosen PAHs in control organs was assumed due to the influence of the various environmental factors such as contaminated soil, air, water and feed with PAHs. Furthermore the hind leg exhibited the maximum concentration (4.52 ng/g) of phenanthrene while the anthracene in the grilled chest was observed in minimum concentration (0.11 ng/g), respectively. Similarly, a few experimental grilled organs did not show any of the determined eight PAHs which might be attributed due to either lower than the detection limit of the instrument or any other factor.
