- Abstract
The article presents a study that investigates on the preliminary probiotic selection of lactobacilli from koumiss in Mongolia. The study was administered by collecting 16 samples of traditional fermented koumiss wherein 48 lactobacilli strains was isolated wherein their fermentation abilities were assessed using phenotypical characterization and biochemical tests. The study reveals that the samples has lowered frequency of isolation level that can resist low acid and prolong cold storage. It also cites the different types lactobacilli species discovered during the study, along with their viabilities, antimicrobial activities as well as identification.
