- Abstract
Food thickeners are widely used in modifying rheology and texture properties of foods as well as enhancing quality attributes. Polysaccharide thickeners is a large proportion in food thickeners. However, different types and properties of thickeners can affect their applications. In this review, types of polysaccharide thickeners were categorized, and their properties were compared. In addition, this paper summarized application fields of polysaccharide thickeners in the food industry, and focused on the application in functional foods and foods for special medical purpose, such as dysphagia, gluten-free and low-fat food. Finally, future prospects on product preparation, product application and "cleaning label" were proposed.
