- Abstract
Background: Ground beef is a food characterized among others by its practicality in its preparation. However, being a meat product, for its high water activity and pH close to neutrality, it becomes in an excellent medium for bacterial growth and also by the grinding process becomes more prone to contamination by microorganisms that tend to move to the meat by mills that are not sanitized properly and by the increase in contact area. Objectives: To analyze the microbiological quality of ground beef meat retailed in the municipality of Juiz de Fora, using microorganism indicators of hygiene. Methods: 15 samples of ground beef from butcher shops and supermarkets of Juiz de Fora, Minas Gerais, Brasil, being seven samples grounded in the moment of acquisition and eight samples grounded before displayed to sale, were analyzed. The following analysis were made: Coliforms counts at 30 °C, thermo tolerant coliforms count, investigation ofStaphylococcus spp and total aerobic mesophilic count. Results: The coliforms count at 30°C were above 1,1 x 103 MPN/g for the 86,7% of the samples and for the thermo tolerant coliforms count above 103 MPN.g-1 for the 13,33% and lower to 102 MPN.g-1 in 73,33% of the total of the samples. Staphylococcus spp., were detected in the 93,3% of the samples and 66,7% of the samples presented counts of this microorganism between 103 and 105 CFU.g-1indicating a possibly wrong handling of the product. In the count of mesophilic bacteria, the bacteria population oscillated in the samples from 3.5 x 104 to >2,5 x 105 CFU.g-1 and 60% of the samples presented counts above 105 CFU g-1. Conclusions: according to the results it was possible conclude that the ground beef retailed in butcher shops and supermarkets from the city Juiz de Fora - MG is deficient with respect to the microbiological quality, showing deficient sanitary conditions in the commercial places during the processing and storing of the ground beef.
