- Abstract
The hake fish can be contaminated with the broadest and most varied group of microorganisms, mainly due to lack of basic care with places where they are exposed. Objective: To carry out the microbiological analysis of styrofoam boxes and workbench for the hake fish exhibition in two street markets in the city of São Luís-MA. Methodology: A microbiological analysis of styrofoam boxes and workbenchs was carried out in addition to the application of questionnaires. Results: In the investigative analysis, failures were verified in the hygienization of the workbenches and boxes where the fish were stored, besides other requirements that did not obey the norms required by RDC 216/04. In the microbiological analysis were identified a higher amount of forms: Staphylococcus spp, Klebisiella spp and Pseudomonas spp. Conclusion: According to the microbiological analysis, it was concluded that 100% of the samples were contaminated evidencing that the street markets are not in appropriate conditions of operation for distribution of food, which requires orientation programs for the marketers, in addition to encouraging greater inspection on the premises.
