- Abstract
Breakfast meals composed of milk alone or with addition of semolina, corn, oat or barley flakes, white or brown bread or white roll were subjected to enzymatic digestion in vitro, simulating process of digestion in human gut Percentage of iron. zinc and copper released in the digestion process was determined. There was no zinc and some percent of iron and copper released from milk with oat flakes and about 20% of zinc and iron from meal with brown bread. Diet rich in cereal products, especially those made of whole-meal, can lead to microelemants deficiency.
