- Abstract
The subjects of the study were fruiting bodies of the oyster mushroom (Pleurotus ostreatus), originating from home cultivation located in the Subcarpathian province (50°82’ N 23°54’ E). Prepared substrate for the cultivation of oyster mushroom was purchased from a specialized retail store. The first fruiting bodies were harvested 10 days after purchasing the substrate. The content of Cd, Pb, Fe, Mn, Zn, Cu was examined in the collected fruiting bodies of oyster mushroom. Atomic absorption spectrometry (ASA) versions of the flame and cuvette methods were used for metal analysis. The results indicate low contents of Fe, Mn, Zn and Cu in home-grown oyster mushrooms. The study showed that the concentration of selected metals in the analyzed mushrooms decreases as follows: Fe > Zn > Mn > Cu > Cd > Pb. In Pleurotus ostreatus mushrooms, from own cultivation, there was no excessive accumulation of the tested metals: Fe, Zn, Mn, Cu. The concentration of Cd, on average, was at the limit of the recommended limit of 0.05 mg∙kg-1. In contrast, the content of Pb was low, both in the cap and in the stem of the mushroom, below the limit of 0.30 mg∙kg-1.
