Factors affecting the electrical conductivity of a poultry waterbath stunner.
Abstract
The article highlights the results of a study which examined the effects of different salt concentrations and water temperatures, and the use of shackle/leg sprays, on conductivity of a poultry waterbath stunner. The article shows that increasing the temperature from room temperature to approximately 35 centigrade had no significant effect on conductivity under both laboratory and commercial conditions.
