- Abstract
The objective of this work was to evaluate the efficiency of processes of washing and sanitization of lettuces commercialized in open-air market and supermarket in Erechim-RS. For the microbiological analyses of mesophilic aerobic bacteria, total and thermotolerant coliforms, 3 samplings were carried out in 3 different days, from April to June of 2010. The samples were collected from four different producers and commercialized in openair market (A, B, C and D) and one from a local supermarket (E). For each sample, analyses of lettuce in natura, after washing with water and after sanitization with sodium hipochloride were carried out. All samples were in the standard determined by the legislation (<1.0×102 NMP/g for thermotolerant coliforms and absence of Salmonella sp.). High counting of mesophilic aerobic bacteria (mean of 1.9×105 UFC/g) was observed for in natura lettuce. The washing with water was able to reduce in about one logarithmic cycle the counting of total and thermotolerant coliforms and mesophilic aerobic bacteria. The sanitization using sodium hipochloride eliminated the contamination by total and thermotolerant bacteria, and reduced three logarithmic cycles of mesophilic aerobic bacteria, showing efficiency for improving the hygienic-sanitary conditions, warranting a product security for human consume.
